- Plan and direct food preparation and culinary activities- Creation of banquet offers and menus, a la carte menus and all other menus that meet quality standard- Estimate food requirements and food/labor costs- Supervise kitchen staff’s activities- Arrange for equipment purchases and repairs- Recruit and manage kitchen staff- Emphasis on the administrative operations of the kitchen (expenses, normative's, procurement of goods)- Give prepared plates the “final touch”- Perform administrative duties- Assisting in the preparation of the Annual Business Plan for Food and Beverage- Strategically analysing business performance to facilitate accurate and meaningful forecasting, involving the respective Heads of Department as appropriate.- Comply with nutrition and sanitation regulations and safety standards- Keep time and payroll records- Recruitment and selection of all culinary employees with support of HR and ensuring that Heads of Department follow hotel guidelines when recruiting and use a competency-based approach to selecting their employees.- Tracking and overseeing of punctuality and appearance of all culinary employees, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards- Ensuring that employees follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security- Maintain a positive and professional approach with coworkers and customers- Responsible for central kitchen in hotel (550 seats), and also for other a la carte restaurants (steak house, pizzeria, sushi)
